These meatloaf cupcakes with potato frosting are a savoury treat of minced beef and vegetables. They are fit for human consumption without the doggy dental chew topper but if you do make them for yourself I recommend adding a few more flavours such as onion and garlic which are not dog friendly.
This week was my gorgeous dog Ruby’s 6th birthday. I don’t know where the last six years have gone. They have flown by. But I still call Ruby my little puppy. She is neither little or a puppy.

Ruby loves her food. Absolutely nothing takes higher priority for her than eating. She knows the words breakfast and dinner and starts to get restless and hovers at the door at her usual food time. When she sees food she starts to drool and sometimes even has bubbles coming out her mouth.
So it made perfect sense that she should get her own special cupcake for her birthday. And the verdict? She loved it! Can you tell?
To make these Meatloaf Cupcakes I mixed a small amount of minced beef with some grated zucchini and an egg. I put the mixture in a cupcake liner in a muffin tin and baked for 20 minutes.
To make the Potato Frosting I boiled some peeled and cubed potato and then mashed it.
The cupcake topper is a doggy dental chew.
